Welcome Auyeung,
It might not be necessary, but I would do it just to be on the safe side. You do want to be sure that any food you will be keeping for even a few days is in a spotlessly clean receptacle. The boiling only takes a few minutes, so I think it would be worth it. Good luck with your pickles. I bet they will be delicious!

I just procured two lovely warty cucumbers and want to make quick pickles. Thank you for posting this technique. Is it necessary to boil the jars if I plan on eating all the new pickles within a few days?

Welcome Cat!

My husband loves pickled peppers, too! Your recipe sounds really good and I'm so glad you like my pickle recipe. Have fun with it! I know, pickles are one of those things you'd gladly eat a lot of if you have them on hand, and with this quick pickle recipe you can have them pretty much any time you want while cucumbers are in season. Thanks so much for taking the time to comment!

i'm not even vegan and this is a fantastic recipe! long-term pickles are just too much work for me, and quick pickles are the best! i can eat an entire jar by myself in a couple days, and i can make seven or eight jars of pickles for the same amount of money as one jar of the subpar grocery store variety. if i can't find "pickling" cucumbers, my next-favorite type are English cucumbers. they don't have any wax coating and the skin doesn't have that awful bitter taste.

for added kick, i like to add a couple peppers slice in half lengthwise (usually serrano's.) and i've substituted red wine vinegar and made pickled red onions, which are fantastic on salads and sandwiches!
